Cherry / Cranberry Chocolate Cookies

½ cup raw almonds
¼ cup mesquite powder
3 tbsp. Whole cocoa beans (nibs)
¼ tsp. Salt
2tbsp. Liquid coconut oil (softened in water)
1 tbsp. Vanilla
1 cup dried cherries or cranberries
1/3 cup pitted medjool dates.
Combine first set of ingredients in food processor, add coconut oil
And vanilla and process.
Add cranberries and dates and process.
Press dough into cookie shapes or balls.
Chill in freezer until firm. Will keep several weeks in fridge or freezer.
